Healthy couscous salad with feta

Ingredients

  • 150 g couscous
  • 250 g cherry tomatoes cut into quarters
  • 1 cucumber cut into cubes
  • 1 red onion chopped
  • 200 g feta
  • Fresh parsley coarsely chopped
    Dressing
  • 2 tbsp olive oil
  • 1 tbsp tahini
  • 2 tbsp lemon juice
  • Salt and pepper to taste

A nice salty touch of feta and creamy tahini dressing in a super healthy and filling salad with easy vegetables. Delicious to enjoy on a warm summer evening.

Whisk all the ingredients for the dressing together in a bowl. Is the dressing a bit too thick? Dilute it with a little water.
