  • 100 ml whipped cream
  • 150 g grated Gouda cheese
  • 50 g grated Emmentaler
  • 3½ tbsp almond flour
  • 90 g MonChou® Fresh Cream Cheese
  • 2 tbsp grated Parmesan cheese or try Parrano® Original Snippers

There’s nothing like a Mac ‘n Cheese. This keto recipe is without macaroni. Here, cauliflower and a creamy cheese sauce steal the show.

In this recipe you can enjoy Mac 'n Cheese, but without the carbohydrates of pasta. And let's be honest, that cauliflower does quite well in this delicious dish.

Where does this keto macaroni come from?

America! Well, that's not entirely true. The well-known macaroni Mac 'n Cheese that you often see on the menu in restaurants - and occasionally ready-made from a package - does indeed come from America. But the concept of a crispy baked 'pie' of pasta and cheese actually originated in Europe. In Italy, England and France they also ate this centuries ago. It was James Hemings, the enslaved chef of Thomas Jefferson (the American president from 1801-1809), who eventually brought it from France to America. There the dish was received with great enthusiasm. We understand that, because what is tastier than such a creamy cheese sauce and crispy bacon?

Step by Step Instructions

Preheat the oven to 200 °C. Cut the cauliflower into small florets. You can cut the stalk into large pieces.

Cook the cauliflower in a pan with boiling water and a generous pinch of salt for about 6 minutes until al dente. Drain the cauliflower well and let it cool completely.

Fry half of the bacon in a frying pan over high heat until golden brown and crispy. Then let them drain on kitchen paper.

Mix the whipped cream, Gouda and Emmentaler in a saucepan. Let it simmer on a low heat until the cheese has completely melted. Add 1 tablespoon of almond flour and whisk it into the cheese. Add salt and pepper to taste.

Remove the pan from the heat and whisk the cream cheese into the sauce. Add the cauliflower and half of the bacon. Stir well and place the mixture in the casserole dish.

Sprinkle the remaining 2½ tablespoons of almond flour and the other half of the bacon over the whole thing. Grate the Parmesan cheese over it. Bake the Mac 'n Cheese in the preheated oven for 25-30 minutes until golden brown.
