Low-carb casserole with pointed cabbage

  • 700 g pointed cabbage
  • 150 g butter
  • 450 g minced beef
  • 1 tsp salt
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 2 tsp Mexican spices
  • 1 tsp white wine vinegar
  • 300 g Parrano® Rasp Originale
  • 150 g mixed salad

When you think of a casserole with vegetables, you usually think of chicory. With ham and cheese, for example. But pointed cabbage, white cabbage and Chinese cabbage are really vegetables that we often pass by. At least I do. Almost a bit of a forgotten vegetable. A shame actually because it is relatively cheap and very healthy.

Is pointed cabbage healthy?

Cabbage is a source of calcium, potassium and vitamins K and C, so very healthy. This is good for resistance and healthy bones. In addition, pointed cabbage also contains a considerable amount of fiber. Fiber ensures a feeling of satisfaction and helps with weight loss. I often left the pointed cabbage because I had no idea how to prepare it besides raw vegetables. Until I went looking for inspiration and found out that you can vary a lot with pointed cabbage. That is why I tried a casserole with pointed cabbage.

Step by Step Instructions

Preheat the oven to 200 degrees, cut the cabbage into small pieces with a knife or grind finely in the blender.

Fry the cabbage in the butter, let it cook for 30 minutes on medium high heat. Make sure the cabbage is soft but not too dark brown. Add the herbs and vinegar and let it sit for a while.

In the meantime, continue melting the rest of the butter. Fry the minced meat in it until most of the moisture has evaporated from the meat.

Add the cabbage mix and place everything in an oven dish.

2/3 of the cheese can be added to the mix and the rest on top for a crispy layer.

Bake for 15-20 minutes until done. Serve on a bed of rocket or a green salad of your choice.
