Place the swede, pepper and mushrooms in the slow cooker.

Mix the coconut milk with the curry paste and curry powder, and pour this over the vegetables.

Cook for 4-5 hours on low or 3 hours on high, until the swede is cooked but still firm.

Season with salt and pepper, and garnish with fresh coriander just before serving.

Alternative in the frying pan: Fry the onion, garlic, and mushrooms for about 5 minutes until soft. Add the swede cubes and fry for 5-7 minutes.

Mix the curry paste, curry powder, and coconut milk through the vegetables and bring to the boil. Reduce the heat and let the curry simmer gently for 20-25 minutes, until the turnip is cooked but still has a bit of bite. Stir occasionally to prevent it from burning.
